Cream of Broccoli

Course Soup
Servings 4 servings

Ingredients
  

  • 1/2 cup soaked broccoli stems
  • 8 cups of water
  • 1 teaspoon kudzu soaking in cold water
  • 1/2 cup dandelion greens
  • 1 cup soy milk
  • 1 tbsp white miso
  • 1/2 cup red onion
  • 1/2 cup broccoli florets
  • 1 pinch of Salt

Instructions
 

  • Bring broccoli stems to a vigorous boil
  • Mash broccoli stems
  • Put back in soup
  • Add kudzu
  • Boil soup for another minute while stirring with a wooden spoon
  • Turn flame down
  • Slowly pour milk in
  • Add miso
  • Bring flame up just before the boil
  • Add broccoli
  • Shut flame off! Through on red onions!
  • Let sit with lid on!
  • Throw in Dandelion - So Warm, So Good
